Food, Friends, and Awards

On Sunday we hosted a dinner party with our friends. Everyone wanted to chip in and bring something so we did a random pot luck and it turned out great! Most of our friends enjoy cooking so we had quite the spread of food. It was fun doing a "surprise" dinner. We hope to host these once a month.

Take a look at our dinner! Everything was super tasty!

We made black bean soup. One of my favorites!


We had to do Dorie's corn muffins! They went
perfect with the soup!



Scotty brought 3 dishes. First up, a kille
r salad with cucumbers,
tomatoes,
mozzarella, red peppers, etc!


Next, balsamic roasted veggies! I loved the sauce!


Smoked Salmon on artichoke hearts. Genius!
This appetizer was super delicious!



Stephanie's Orange Rolls! The glaze is outstanding!



Jason's famous Ceviche!



Jake's Oatmeal Raisin Cookies! With real cinnamon!


Sug's homemade peach pie! It was still warm from the oven!


I know I forgot to take pictures of some things! Sorry! I got busy eating:) I will be posting the soup and corn muffin recipe this week. We also did a lime loaf cake and lime sherbet. Be on the look out for those too!! Thanks again to all of our friends. We really had a fun night!

what a great spread! frankly, i'd be content with black bean soup and corn muffins (and perhaps a slab of peach pie)--the rest is just a bonus. :)

I can't believe all your friends know how to cook too. Is that why I never get the invite to come over. But I do believe that you won all those awards. Way to go. I always love trying the recipes that you post. It always taste so good even if they don't look as good as yours. So keep them coming. I really think you could make some good money if you were able to open up some kind of food eatery.

What a fun time-- potlucks with friends are the best. It is always fun to see what everyone brings and the friendship and fun times are lasting memories. I like your idea of once a month potlucks. Well-deserved awards, you guys!! I'm not sure how I would have been able to handle a party with so much delicious food-- I'm pretty sure I would have exploded! Awesome! (And yes, the soup is perfect with the muffins, yum! ;)

Everything looks incredible. I wish I lived closer and could be a part of those monthly get togethers. I would bribe you with some of my best dishes so I could get an invite :) Can you also get the recipe for the artichoke/salmon appie. It looks so unique. Looking forward to your soup one.

The peach pie melted my heart. That is probably one of my favorite desserts of all time. My grandparents had 40 acres of peaches so it always brings great memories. You can invite me anytime!
As far as the mushrooms go...it is really versatile, a little more of this, less of that, and I like lots of breadcrumbs so I used more. Okay, gotta go, I am only on lunchtime.

OK, I swear I had you on my google reader, but I came over today and I've missed so much!! Everything looks sooo good. And I've never even heard of Boulder, but I guess I didn't grow up in Utah, so I'm sure there are a lot of places I've never heard of. I for sure have you on my reader now, so it shouldn't take me so long to come back!

Also - the banana whoopie pie changes:

-I used margarine (make sure the package says good for baking) instead of butter, fat free sour cream and fat free cream cheese. These tweaks = 100 calories per whoopie pie.

-I also added cinnamon to the cream cheese filling.
