Pumpkin Chocolate Chip Bundt Cake
Sorry if I scared any of you with my mention of the pumpkin shortage. I went grocery shopping this weekend and it looks like pumpkin is back in full force. So stock up and try this pumpkin chocolate chip bundt cake.
2 sticks unsalted butter, at room temperature
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
3/4 teaspoon ground allspice
Pinch of fresh nutmeg
1/2 teaspoon salt
1 1/4 cups canned solid-pack pumpkin (I used Libby's, not pumpkin pie filling)
3/4 cup well-shaken buttermilk
1 1/2 teaspoons vanilla
1 1/4 cups granulated sugar
3 large eggs
Chocolate chunks or chocolate chips ( I used E. Guittard milk chocolate bars and chopped them)
Preheat oven to 350°F. Spray a 10 inch bundt pan, then dust with flour, knocking out excess.
Whisk together flour, baking powder, baking soda, cinnamon, allspice, fresh nutmeg, and salt in a bowl. Whisk together pumpkin,buttermilk, and vanilla in a separate bowl.
Beat butter and sugar in a large bowl with an electric mixer at medium speed until creamy. Add in eggs one at a time, while mixing on low.On low, add flour and pumpkin mixtures in batches, beginning and ending with flour mixture. Mix just until combined, don't overmix. By hand, stir in the chocolate chunks.
Spoon cake batter into pan, smoothing top. Pound the pan on the counter to settle the batter. Bake until a toothpick comes out clean in the center of cake, about 45- 50 minutes. Cool the cake in the pan, on a rack, for 15 minutes. Invert rack over cake and reinvert cake onto rack. Cool completely before serving. Dust with powdered sugar, if desired.

Looks great! I was finally able to find pumpkin as well, which is a relief! Like you, I dislike icing/frosting and usually scrape it off too, so it's great that this cake is great without it.
Oh I wish I had some of this right now - would go great with coffee wouldn't it. This is a keeper for sure.
Yesterday I almost bought a mini bundt pan but am a little fearful that they won't come out of the pan. This would be a perfect recipe to try. Maybe I'll go back and buy that pan.
yummmmmmmmmmm looks awesome! The shortage is over? I still can't find it at my regular grocery store=lame! hopefully they will have it this week.

This looks beautiful, and I love the way you poured the chocolate chips in the middle :) I'm a brand new pumpkin fan, never appreciated it before this year. Can't believe how much I was missing out! I especially love it with chocolate, so I'll keep this one on my list.

The pumpkin shortage never seemed to make it's way to my grocery stores... thank goodness! I already have some pumpkin puree on hand and this cake looks fantastic. I have made pumpkin chip cookie bars before (that were wonderful) and the flavors in the cake remind me of them.

I've had a fear of Bundt cakes for years. It all started when I started having Bundt cakes that did not fill the pan and my cakes ended up kind of flat. I'm getting over it slowly though. I've made a few Bundt recipes from the most trusted sources.

I like frosting, but it has to be GOOD frosting. If it tastes like nothing but a pile of sugar, then I'm totally in your corner.

There is actually a pumpkin shortage by me. They are only letting people buy 2 cans on each visit. AND they keep it locked up behind customer service. Hah.
