Recipe for Potato Rolls



We had a great weekend with my family. We celebrated Halloween on Friday with our niece...she c
ame trick or treating in her angel costume. She was adorable!

We also celebrated Thanksgiving on Sa
turday. I know we jumped the gun, but Thanksgiving is my dad's favorite holiday...really the only one he likes. Food and football, how can anyone not like it??? So since we aren't going home to Illinois this year he wanted to cook us a feast before he left. I will be sharing some of the recipes this week from our family dinner. It was a lot of fun and oh so tasty!! My dad can cook a mean meal!

Today I am sharing my dad's famous Potato Roll recipe. They are to die for! The best rolls ever! Everyone always asks for the recipe...or for him to make them:) They are light and fluffy and best right out of the oven. He usually makes them into clover leaf rolls...my niece called them Mickey Mouse rolls:) This year he did a couple different shapes. They were a hit!!










POTATO ROLLS

1 pkg. yeast in 1/ 2 cup warm water
3/4 cup shortening
½ cup sugar
2 eggs
1 cup mashed spuds
1 cup scalded milk
5 cups flour
1 tsp salt

Mash the spuds ahead of time. Put the yeast in the warm water with a little sugar and set to rise about 5 minutes. Scald the milk and let it cool down so you don't kill the yeast. Mix the sugar and shortening and salt in the bowl, add the milk then put in about a cup of the flour. Then add the yeast and the beaten eggs. Then add the spuds. Then you add the flour until you can work the dough. Knead it until smooth by adding some flour. Then put it in a greased bowl for about 45 minutes. Then punch it down and form the rolls-into three balls. Dab each ball with butter and put in muffin tin. Let them rise until doubled. Bake at 375 for about 15-20 minutes.

What a sweet little niece you have -- those eyes! I could eat an embarassing quantity of those rolls all by myself, I promise you. BTW, I wanted to tell you guys that I made your pumpkin pancakes with cinnamon syrup this weekend, Y'all, they were seriously the best pancakes that I have EVER had!! The recipe was PERFECT -- the batter was not too runny, not too thick. They were light and fluffy and just absolutely delicious. The syrup was out of this world. My breakfast guests were wowed. THANK YOU!!

First...Frame a large print of your niece in the leaves, it is priceless!!!
Second, and right behind first. Your dad should send us all potato rolls, warm of course.
I love my family because if anyone ever showed up with brown and serve rolls they would have been shunned. But these, these may have never made it to the table. We would have eaten them all in the kitchen.

These are my favorite kind of rolls! I usually buy them from the grocery store, but I'm definitely going to attempt this recipe on Thanksgiving.
