Recipe for Chicken Smothered Nachos



Did everyone enjoy the big game? We sure did! It was great right up to the end! I am happy with the outcome! Yahoo for the Steelers! We went to Dewey's house for the weekend, it is our tradition!! It was loads of fun!!

There was a big crowd to watch the game so we made a lot of food...probably too much, but oh well, it was all in good fun:) I will be sharing some of the recipes this week!!

Lincoln requested nachos...and what Lincoln wants, Lincoln gets:) We started with white corn tortilla chips and smothered them with just about everything imaginable....cheese, chicken, black beans, green chiles, homemade pico, and guacamole. They were easy to make and fed the masses!! Great choice Lincoln!!!








Chickeed Smothered Nachos

Tortilla chips (we used white corn)
Cheese (we used reduced fat Monterey Jack)

Shredded chicken (we used a pressure cooker to cook the chicken and then shredded it w/a fork)
Black beans (we used canned, reduced sodium)
Green chiles, diced

Pico de gallo (we made our own, see below)

Gucamole (see above for our recipe)


1. Layer chips out on a baking sheet. Layer the cheese, chicken, beans, and green chiles. Top with extra cheese if you wish! 2. Put pan under broiler for about 5 minutes. Watch them closely, you don't want them to burn. Make sure the cheese is melted though. 3. Remove from oven and top with pico and guacamole.

Pico de Gallo

Roma tomatoes, diced

Green onions, chopped

Jalepenos, diced

Garlic, minced

Cilantro, chopped

Fresh lime juice

Salt and pepper


We never measure anything. Just taste as you go and make it to your likings!

On Friday, I made Nachos Pie with a leftover of Texas chili and it was incredibly good!
