Cake Class at Viking
We are having fun at the Viking Cooking School. We did another class and this time it was all about cakes! We made five cakes in five hours!! The time went quickly because we were having loads of fun!!
First, we made a red velvet layer cake with cream cheese frosting. This was my first time making a red velvet cake! I loved the bright red color! This is the perfect cake for Valentine's day too!
Next, we made coconut cupcakes with a swiss buttercream frosting. The cupcakes were really cute and had a great coconut flavor, but I personally don't like swiss buttercream..it is too buttery for my likings:)
We also made a chocolate sheath cake. The frosting was silky smooth and the cake was very very decadent!! Easy to make though!! Nothing fancy, you bake it in a 9 by 13 pan, so there is nothing to fuss over!
Then, we made a five flavor pound cake. It had vanilla, coconut, lemon, rum, and almond extracts! We baked it in a tube pan until it was golden brown. When it was finished baking we poked it with holes and poured a glaze all over. This was my favorite one!! It was bursting with flavor and the cake was really moist.
Finally, we made a caramel apple upside down cake. We baked the cake in a cast iron skillet, with the apples on the bottom. We flipped it over and added a caramel sauce. A very rustic...and delicious dessert!
So we had a busy day in the kitchen! It was fun baking so many different kinds of cakes! Luckily, they didn't make us eat them all...ha! That was a lot of cake! For more information about the Viking Cooking School visit their website: http://www.vikingcookingschool.com

You are so Darned lucky. Wish I was there. SO so wish!! Crying, I am !!!
ReplyDeleteOoohhh this looks like so much fun! I wish I was there!
ReplyDeleteIf you think you don't like Swiss meringue buttercream, you should try my recipe for it. I use less butter and a little more sugar than all the other recipes I've seen. I don't like it too buttery either!
A cake making class sounds like loads of fun!
ReplyDeleteWow, I can't believe you did all that in just 5 hours, and everything looks super.
