Recipe for Coconut Oatmeal Chocolate Chip Cookies
I know everyone is probably sick of cookies and cookie recipes, but NOT me! The holidays did not burn me out. Cookies hold a special place in my heart. They just make me happy...and my tummy happy too!
We had some friends over to watch a movie, so of course I had to bake a treat! I was in the mood for oatmeal cookies and they are Josh's favorite too! I wanted something a little different though. This time I added coconut and chocolate chips! A divine combo indeed! We especially loved these with a glass of cold milk!! These are the perfect dunkaroos!
Coconut Oatmeal Chocolate Chip Cookies
1 1/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup unsalted butter
1 egg
1/2 teaspoon vanilla
1 cup oats, old fashion
1 cup shredded coconut
1 cup semi-sweet chocolate chips
Preheat oven to 350. Sift together flour, baking powder, baking soda, and salt into a bowl. Cream together sugars and butter with a mixer. Add egg and vanilla and beat until smooth, about 2 minutes. Stir in oats and coconut. Add in chocolate chips. Shape to form 1 inch balls. Place on ungreased cookie sheet about 2 inches apart and bake 12 minutes or until tops are golden. They will still be soft, but don't worry. They harden as they sit. 12 minutes was the magic number for me. NO longer!
Me neither.. I am not sick of them.. I don't think I ever will... I am a huge fan of coconut... coconut perfume.. you name it, if I could buy Hawaiian Tropic in a bottle I would...

Oatmeal cookies are my favourite. And can be eaten when I wake up because... oatmeal!

ReplyDeleteI was looking for a good cookie recipe to use up the coconut I had and this is definitely it! I just whipped it up and have already sampled the first batch - delicious! I like the proportions of ingredients too - they don't overpower each other. :)
