Josh makes a mean mango salsa! It is one of his specialties! It is great with chips, paired with any Mexican dish, or we love it smothered on grilled salmon! All you have to do is chop, stir, and eat! Enjoy!
Josh's Mango Salsa
12 Roma tomatoes, diced
1-2 mangoes, diced
2-3 cloves of garlic, minced
1 small bunch of green onions, chopped
1 bunch of cilantro, chopped
1-2 jalapenos, minced
Salt
Pepper
Freshly squeezed lime juice
1. Chop up all of the ingredients and toss them into a big bowl.
2. Add salt and pepper to taste.
3. Squirt fresh lime juice over the top, to taste, and stir!
4. Eat up! The salsa will stay fresh for a couple of days in the fridge.
**Do everything to your taste! For example, if you don't care for onions, garlic, etc. leave it out or lessen the amount! This is how we like it, but feel free to play with the recipe!**

ReplyDeleteI still have tomatoes and jalapenos ripening, this would be a great way to use them. And I agree with lori lynn, your salsa would pair really nicely with salmon.
