Recipe for Egg Vegetable Casserole
I am not a fan of casseroles. The name alone doesn't sit right with me. I don't like mixing my foods and it seems like most casseroles contain canned soup, which is scary to me. I am sure there are some fabulous casseroles out there. I know they make quick and easy meals and most people enjoy them, but they are not my "cup of tea."
We had some friends over for brunch and Josh asked if he could make an egg CASSEROLE. AGGH! That word again:) I didn't like the idea at first, but after he explained what he wanted to make, I was all for it.
He basically made a frittata, except it was in a 9 by 13 pan, in the oven. He used eggs and veggies-onions, red and yellow peppers, tomatoes, and spinach. He also added in some mozzarella cheese. He whipped it up in a hurry and it was actually really pretty when he pulled it out of the oven.
If you are having company for breakfast or brunch, give an egg casserole a try! It's easy and will feed the masses! And I guess I should give casseroles a break, they aren't that bad after all. At least this one wasn't!
Egg Vegetable Casserole
Splash of skim milk
Salt and pepper to taste
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 red onion, diced
1 cup of fresh spinach, chopped
3 Roma tomatoes, diced
1 cup mozzarella cheese, shredded
Parmesan cheese, shredded
1. In a large bowl, whisk together the 18 eggs. Add a splash of milk. Add salt and pepper to taste. We also used Spike seasoning, 1-2 teaspoons. If you don't have this, try Italian seasoning instead.
2. In a large skillet, saute the peppers and onion in a little bit of olive oil.
3. Add in the spinach for a minute or two.
4. Pour the eggs in a greased 9 by 13 Pyrex dish. Add in the sauteed veggies and tomatoes. Stir everything in the pan.
5. Stir in mozzarella cheese. Make sure everything is distributed evenly.
6. Bake in a 350 degree oven for about 35-40 minutes or until the eggs are set and golden.
7. Sprinkle the casserole with Parmesan cheese if you wish.
I agree- the world casserole just brings up memories of a super nasty dinner! This one looks very good though. I am really enjoying eggs these days- great source of protein! Maybe I will whip up an egg casserole!
This looks reat-we are hgue frittata fans so call it cassarole or frittata, as long as it has eggs and veggies, we are in.
Casseroles are okay... not my favorite though ;-)
Love your casserole though!! So vibrant!!
I love good egg casserole, well we call them hotdish here in MN
Yes I agree - casserole just doesn't sound good!
Yum! I am not a fan of dinner casseroles either but I do like breakfast ones, both eggs and the French toast type.
Ooh, this looks yummy. Looks so bright and fresh!
This looks delicious. I am glad you gave the "casserole" a try.
Maria I looks so pretty and sounds so good. Casserole some of us have good memories it depends on your age.Great Pictures.
I am not a casserole fan. We actually call them "hot dishes" here in MN.
But i must say, I love the colors of your dish!!! Very pleasing to the eye!!!!
I am glad I am not the only one that doesn't like the word casserole. Thanks everyone for your comments!
That does look tasty! Frittatas are also yummy for brunch.
I don't like anything with "cream of" soups in it either!
I love all the colors in there ! it looks great so I have no doubt it tastes great!
This looks good. I'm with Nett, the casseroles I've had really rock! It's kind of like saying you don't eat cake...way too general = )
I'm not generally a fan of casseroles either! This one looks yummy though and really colorful and pretty with all those veggies!
I am a fan of anything that requires less labor and tastes great...human nature you see :)
And this looks soooo fluffy and yummy!
The colors of your dish are spectacular!
that looks so yum and flavorful! being chinese, my mother never really made any casseroles... our "leftovers" would go into things like fried rice or be eaten with noodles. but that frittata has brilliant colors!
It looks damn tasty to me! I just made spinach "brownies" that look similar!
I hope I didn't offend anyone out there, if you love casseroles, good for you! I am glad! I am just not a huge fan, if you have good recipes, let me know. I am willing to give them a chance:)
Casseroles to me is a all in one catch phrase for I have a ton of stuff and really no set plan to get rid of it so everyone in a pan.
Looks awesome and definitely looking for breakfasty food for when friends decide to party to much the night before and need a place to crash overnight.
No, but there are some casseroles that are scary, so I know what you mean. Those ones with all the soup and salt, ick.
But this looks nice and light and it is filled with veggies!
I am with you on casseroles, they remind of Campbell's creamy chicken soup. Yours have all the healthy ingredients! Looks great!
I am not a huge casserole person either but I do love a frittata. This looks tasty.
I am a total casserole whore! LOL. That Egg one looks great for an Easter Brunch!
Oh glad to discover this recipe Maria. It's new to me and sounds really delicious. perfect for brunch with family and friend on Sunday. THanks for sharing your delicious egg casserole.
Now this is one casserole I would definitely try.
Yum this would be a great addition to Easter brunch. Great recipe!
A delicious way to cook veggies! Colorful and appetizing!
i actually love casseroles, but not so much the ones with the "cream of..." soups. this is definitely frittata-like, and i think it's fabulous!
Just call it a frittata and it'll taste better :-)
Sounds delish! I agree that most casseroles are very scary, but this one didn't involve condensed anything, or frozen hash browns, so it is all right by me. :)
I must admit - I do love casseroles. They're just so comforting. I'm thinking about making this for Easter brunch. 18 eggs..wow!
I actually have a few casseroles that I love. Having four hungry boys and a hubbie to feed, one dish meals are a lifesaver. This one looks great, I might have to try it over Easter weekend.
I love your blog, and I have given you an award. You can find it here:
He did a great job! It's so colorful. :)
I say casserole, you say frittata. Nomenclature problem solved. :-)
I remember hating casseroles as a child because I hated creamy foods all mushed togehter. I'm more tolerant of that sort of thing now as long as it's not made of tons of overcooked vegetables. Isn't the word "casserole" a bastardization of "cassoulet"? If you think of it that way, it doesn't sound so low-class.
I love the bright colors! This sounds like a great, easy breakfast/brunch item!
This sounds really tasty! I just made a fritatta but this looks like an even better recipe for a crowd.
didn't have much casserole growing up so i'm ok with it-- but i agree with you on those canned broths/soups that they add to it. I don't use them in mine. The thing I like about casseroles is the convenience. They're mostly one pot meals... your casserole i wouldn't mind having for breakfast.
What a colorful and yummy looking breakfast!
I agree I hate the casserole thing because of how it looks, but it is time saving. Love the colors!
I think Ben would even like this! I love casseroles, but he hates them!
Looks delicious to me! Love this sort of thing... especially for brunches!
Looks great but then again I'm a casserole girl!
I think we just need to come up with a name besides "casserole." I think "baked fritatta" works great! Whatever you want to call this, I know that I will LOVE it. I might actually make this for a "breakfast for dinner" night this week!
my sister makes something like this except it also has spicy sausage in it. it looks delicious!
It's so pretty - I love all the veggies in it!
Mmm all those veggies look delicious! I have to laugh at your aversion to casserole, sorry :) For me I love the word and think a warm gooey concoction but only eat casseroles that I make in my own kitchen. The line up of casseroles at pot-lucks and family dinners do kind of scare me because you never know what crazy stuff people put in them, so I stay away.
Looks wonderful! I love a nice hearty breakfast sometimes!
It sounds delicious and is very pretty looking with all the colors. Easy too!
You call it casserole, I call it frittata, it still comes out the same way, delish!!
this looks fabulous!! great job!
Can we come up with a new name for casserole? I've had a few good ones, but I agree with you about their reputation.
This one however, looks like my 10th option for Easter Brunch!
Mmm, that would be great for breakfast, lunch, brunch, or dinner! I love eggs and veggies just make them that much better.
I am totally with you on the casseroles and all the canned soups, that's why I rarely make them. But this looks awesome!
haha, i never thought about it, but i don't like that word either :)
So colourful and pretty!
This egg casserole looks delicious! I love the idea of loading my eggs down with lots of veggies--and mozzerella...fabulous!! I'm totally going to make this soon. I just need to find myself some great breakfast guests first!
Ahh, yes, the word casserole conjures images of suffocatingly rich dishes that are choked with over-processed foods... I prefer "baked" something. Like.. baked egg vegetable? Something like that, to do this beautiful dish justice!
I love this - perfect! I've always been wary of the word "casserole," but eggs and vegetables and cheese? Sign me up!
I'd be all over this. Looks fantastic!
This looks fantastic.. although casseroles arent my favorite, this looks spectacular, love the color and veggies.
I hate the word "casserole" too!
Your is a STRATA in my book!
and really looks delish.
Like a quiche made in a big pan without a crust!
Great for brunch!
actually, I just realized a strata has bread! so let's just call it a big crustless quiche!
This looks wonderful with such vibrant colour but then again I'm a casserole girl too :0)
I'd love to come over for breakfast! It's my favorite meal of the day, especially if it's served up like this...and maybe with tasty monkeybread muffins on the side :D.
I really like doing egg casseroles like this. They are so easy to make and so good!
Oh, my...does this look good! I've been missing some of your great posts...I need to catch up.
