Recipe for Egg Vegetable Casserole
I am not a fan of casseroles. The name alone doesn't sit right with me. I don't like mixing my foods and it seems like most casseroles contain canned soup, which is scary to me. I am sure there are some fabulous casseroles out there. I know they make quick and easy meals and most people enjoy them, but they are not my "cup of tea."
We had some friends over for brunch and Josh asked if he could make an egg CASSEROLE. AGGH! That word again:) I didn't like the idea at first, but after he explained what he wanted to make, I was all for it.
He basically made a frittata, except it was in a 9 by 13 pan, in the oven. He used eggs and veggies-onions, red and yellow peppers, tomatoes, and spinach. He also added in some mozzarella cheese. He whipped it up in a hurry and it was actually really pretty when he pulled it out of the oven.
If you are having company for breakfast or brunch, give an egg casserole a try! It's easy and will feed the masses! And I guess I should give casseroles a break, they aren't that bad after all. At least this one wasn't!
Egg Vegetable Casserole
Splash of skim milk
Salt and pepper to taste
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 red onion, diced
1 cup of fresh spinach, chopped
3 Roma tomatoes, diced
1 cup mozzarella cheese, shredded
Parmesan cheese, shredded
1. In a large bowl, whisk together the 18 eggs. Add a splash of milk. Add salt and pepper to taste. We also used Spike seasoning, 1-2 teaspoons. If you don't have this, try Italian seasoning instead.
2. In a large skillet, saute the peppers and onion in a little bit of olive oil.
3. Add in the spinach for a minute or two.
4. Pour the eggs in a greased 9 by 13 Pyrex dish. Add in the sauteed veggies and tomatoes. Stir everything in the pan.
5. Stir in mozzarella cheese. Make sure everything is distributed evenly.
6. Bake in a 350 degree oven for about 35-40 minutes or until the eggs are set and golden.
7. Sprinkle the casserole with Parmesan cheese if you wish.
I agree- the world casserole just brings up memories of a super nasty dinner! This one looks very good though. I am really enjoying eggs these days- great source of protein! Maybe I will whip up an egg casserole!
This looks reat-we are hgue frittata fans so call it cassarole or frittata, as long as it has eggs and veggies, we are in.
Casseroles are okay... not my favorite though ;-)

that looks so yum and flavorful! being chinese, my mother never really made any casseroles... our "leftovers" would go into things like fried rice or be eaten with noodles. but that frittata has brilliant colors!

Casseroles to me is a all in one catch phrase for I have a ton of stuff and really no set plan to get rid of it so everyone in a pan.
Looks awesome and definitely looking for breakfasty food for when friends decide to party to much the night before and need a place to crash overnight.
No, but there are some casseroles that are scary, so I know what you mean. Those ones with all the soup and salt, ick.

Sounds delish! I agree that most casseroles are very scary, but this one didn't involve condensed anything, or frozen hash browns, so it is all right by me. :)

I actually have a few casseroles that I love. Having four hungry boys and a hubbie to feed, one dish meals are a lifesaver. This one looks great, I might have to try it over Easter weekend.

I remember hating casseroles as a child because I hated creamy foods all mushed togehter. I'm more tolerant of that sort of thing now as long as it's not made of tons of overcooked vegetables. Isn't the word "casserole" a bastardization of "cassoulet"? If you think of it that way, it doesn't sound so low-class.

didn't have much casserole growing up so i'm ok with it-- but i agree with you on those canned broths/soups that they add to it. I don't use them in mine. The thing I like about casseroles is the convenience. They're mostly one pot meals... your casserole i wouldn't mind having for breakfast.

Mmm all those veggies look delicious! I have to laugh at your aversion to casserole, sorry :) For me I love the word and think a warm gooey concoction but only eat casseroles that I make in my own kitchen. The line up of casseroles at pot-lucks and family dinners do kind of scare me because you never know what crazy stuff people put in them, so I stay away.

This egg casserole looks delicious! I love the idea of loading my eggs down with lots of veggies--and mozzerella...fabulous!! I'm totally going to make this soon. I just need to find myself some great breakfast guests first!
Ahh, yes, the word casserole conjures images of suffocatingly rich dishes that are choked with over-processed foods... I prefer "baked" something. Like.. baked egg vegetable? Something like that, to do this beautiful dish justice!
