Oatmeal Cookies with Lime, Coconut, and White Chocolate
I recently created a special cookie for my Joshua. He loves my oatmeal chocolate chip cookies, so I used the oatmeal dough as the base. He is also in love with everything lime, so I added in lime zest and a couple drops of fresh lime juice. I wasn't sure how the juice would take to the cookies, so I just added a little. I had a good thing going, so I continued on.
½ c. brown sugar
1/2 c. white sugar
1/2 cup softened unsalted butter
1 tsp. Vanilla
Zest of 1-2 limes (I used 2)
A couple drops of fresh lime juice
1/4 tsp. Salt
1/2 tsp. Baking powder
1/2 tsp. Baking soda
1 1/4 c. flour
1 1/4 c. oats
About 3/4 cup coconut
About 1 cup white chocolate chunks (or chips)
Cream the butter with the sugars until soft and creamy, using a mixer. Add in egg and vanilla. Add in lime zest and juice. Mix briefly. In a separate bowl combine the salt, baking powder, soda, flour. Add to wet ingredients. Mix until blended. Add your oats and then your coconut and chocolate.
Bake at 375 for 10-12 minutes! Don’t let them get too done…they are better when they are soft!
Never thought to pair oats with tangy lime & coconut - LOVE IT!!!
What a great idea! It looks like a delicious cookie!!!
That sounds like a great comination of flavors!
Isn't it fun to bake cookies for your honey?? I sure think so ; )

Oh a tropical oatmeal cookie.
I just toasted some coconut and can't stop eating it so I think these cookies are wonderful! What nice flavors. Oatmeal has to be about my favorite cookie too besides an old fashioned chocolate chip cookie. Will bookmark this!
Great flavor pairing! And they look so good!
Looks like you've invented a wonderful cookie! I've never had lime in cookies until trying Dorie's coconut butter thins (just last night) and I'm hooked! And if I liked that one, which had coconut it it (not one of my favorites), I know that I will LOVE this one with oatmeal and white chocolate!!! So glad that your sweetie enjoyed these!
Thanks everyone! I really liked the flavor and the oatmeal base was fantastic!!
That combination is a winner! OMG, I'm drooling!

Ever since I developed my recipe for white chocolate lime cookies I have been facinated by the combo. Yours adds coconut and oats ... wowie, that looks yummy!
I think I would really like these. It reminds me of the silly song I love, you out the lime in the coconut, you stir it all up. or something like that.
Anyhoo, yes, I have been to Palm Beach many times. My sister lives just South, I live 3 hrs North and my best friend lives in West Palm. It's a great place. Say hello to the palm trees everywhere.

How do you manage to take everything I love and turn it into a cookie?!? If I didn't have 2 batches of cookie dough in the fridge already, I'd so be making these today! Definitely bookmarking though.
As for chocolate frosting, I use the recipe my grandma has been using for ages. I dunno where she got it so I just call it hers, but the recipe is here: http://howtoeatacupcake.net/2008/11/trick-or-treats.html Sometimes I have to add more milk to it.
That looks so good! I'm not into lime, so I'll try caramel or butterscotch!
Great flavor combo. I'm sure the texture of the oatmeal played great with the lime and coconut. I'm glad they were a success.

The ingredients listed on the container for the PB are peanuts and salt thats it. I'm not sure if the oils could be hidden somewhere. I will investigate and let you know
That's what I love about cookies - you can really play around with the ingredients to get them just the way you like them. This combo sounds fantastic! Me and Brad are so with ya'll - everything is better with lime!
Me again ;) The container says no hydrogenated oils! Its seriously the best PB ever
I love oatmeal cookies the best too. What a great new flavour!
the lime is a totally unexpected ingredient--i love it! oatmeal cookies with raisins are supremely boring compared to this concoction. :)
