Oatmeal Cookies with Lime, Coconut, and White Chocolate
I recently created a special cookie for my Joshua. He loves my oatmeal chocolate chip cookies, so I used the oatmeal dough as the base. He is also in love with everything lime, so I added in lime zest and a couple drops of fresh lime juice. I wasn't sure how the juice would take to the cookies, so I just added a little. I had a good thing going, so I continued on.
½ c. brown sugar
1/2 c. white sugar
1/2 cup softened unsalted butter
1 egg
1 tsp. Vanilla
Zest of 1-2 limes (I used 2)
A couple drops of fresh lime juice
1/4 tsp. Salt
1/2 tsp. Baking powder
1/2 tsp. Baking soda
1 1/4 c. flour
1 1/4 c. oats
About 3/4 cup coconut
About 1 cup white chocolate chunks (or chips)
Cream the butter with the sugars until soft and creamy, using a mixer. Add in egg and vanilla. Add in lime zest and juice. Mix briefly. In a separate bowl combine the salt, baking powder, soda, flour. Add to wet ingredients. Mix until blended. Add your oats and then your coconut and chocolate.
Bake at 375 for 10-12 minutes! Don’t let them get too done…they are better when they are soft!

I just toasted some coconut and can't stop eating it so I think these cookies are wonderful! What nice flavors. Oatmeal has to be about my favorite cookie too besides an old fashioned chocolate chip cookie. Will bookmark this!

Looks like you've invented a wonderful cookie! I've never had lime in cookies until trying Dorie's coconut butter thins (just last night) and I'm hooked! And if I liked that one, which had coconut it it (not one of my favorites), I know that I will LOVE this one with oatmeal and white chocolate!!! So glad that your sweetie enjoyed these!

Ever since I developed my recipe for white chocolate lime cookies I have been facinated by the combo. Yours adds coconut and oats ... wowie, that looks yummy!

This is such a creative combination of ingredients! I absolutely love lime and coconut (and chocolate of course!) so I'm sure these cookies are amazing. It is so sweet that you came up with these just for your husband :)

The ingredients listed on the container for the PB are peanuts and salt thats it. I'm not sure if the oils could be hidden somewhere. I will investigate and let you know
That's what I love about cookies - you can really play around with the ingredients to get them just the way you like them. This combo sounds fantastic! Me and Brad are so with ya'll - everything is better with lime!
