Chocolate Mint Thumbprint Cookies
I recently created an account on Twitter, I really wasn't sure how it worked or what it involved, but I soon found out and now I am addicted. Josh thinks I need professional help:) It is fun to "chat" with so many friends and everyone is so helpful. If I have a question, it is usually answered in minutes by a couple of different people. I think Twitter is broadening my horizons and expanding my knowledge:) See, it is a good thing!
I was on Twitter awhile ago and saw Dawn's tweet about some cookies she just made. Of course, I hurried over to her blog to check them out. She made Recipe Girl's, Chocolate Mint Thumbprints. The cookies looked incredible! I immediately added them to my never ending baking list.
I never buy Girl Scout cookies, don't get me wrong I love cookies and adorable little girls, but I don't need any extra sweets in my house. I bake too much as it is. Everywhere I turn though I am haunted by GS cookies, especially the thin mints. So to curve my craving, I decided to bump the Chocolate Mint Thumbprints to the top of my list.
I really enjoyed making these cookies. The cookie part was similar to a chocolate shortbread, the perfect base for a mint filling. I melted Andes mint chips for the filling since I had them on hand. Chocolate and mint are meant to be together if you ask me. These cookies kicked my Thin Mint craving for sure! Thanks to Dawn and Lori, my Twitter buddies:) See without Twitter I wouldn't of made these fabulous cookies, it is helpful in so many ways:)

You're better than me, I can't turn down Girl Scout cookies. I think it's because I remember selling them so the nostalgia factor sucks me in. Thin Mints are the only GS cookies that I really like and I am super excited to try these cookies! They look amazing.
oh my gosh- these look tooo good! YUM! Josh's mom brough us some girlscout cookies and they will be hanging out in the fridge for a while now ;)
According to my clean rules (and everyone should do what works for them), certain cereals are allowed- oats (for oatmeal) and anything without a lot of added junk- whole wheat only. Special K is not on the list- haha, Josh's clean is a lot different than mine

I buy girl scout cookies from all my nieces, but I tell them to choose the box and then keep the cookies.
It's a donation to the girl scouts.

Cookies really don't do it for me unless they are straight out of the oven and they cannot be crispy at all so I have no problem walking away from girl scout cookies. Your cookies on the other hand look pretty good, soft & chewy!

These cookies look amazing! I was disappointed with the thin mints this year (reduced box size and cookie size/shape), so this is a great replacement. The chocolate inside looks like a little pool of delicious minty chocolate!
I am also addicted to Twitter. My husband makes fun of me, but I think it has been a great thing :)

GS cookies are too dangerous to have around, I totally agree! But people used to bring in boxes to the office and I just couldn't resist the temptation. BTW - I got the vanilla and am so excited to use it!!

As you know from Twitter (or is it Facebook? :-)) I have a weakness for Thin Mints, so these cookies are calling my name! You never steer me wrong with cookies . . . or soups . . . or sandwiches . . . fajitas . . .okay, you get the idea. Can't wait to try these!

I don't eat a lot of sweet things so I have no probelem turning down the girl scout cookies. These thumbprint cookies, however, are a whole other ball game. They look fab.

your typical jam-in-shortbread thumbprints are good enough, but these are outstanding! that pool of melted andes is just luscious. luscious, i say.

For the best chocolate cupcakes, it's a tie between Martha's One-Bowl Chocolate Cupcakes and Hershey's Perfectly Chocolate Cake (recipe on the back of the cocoa powder, baked as cupcakes). They are both VERY soft and moist!
