Recipe for Homemade Spinach Pasta
We love making homemade pasta! This time we tried spinach fettuccine and once again we were in heaven! Josh is the pasta king! I help, but he is the reason our pasta turns out so well. We even started making it late one night. I thought it would take forever, but we were done in 30 minutes. I was impressed!
Using frozen spinach makes this so easy! I am sure you have everything at home..as long as you have a KitchenAid and the Pasta Attachment. If you don't, go out and buy it! It is well worth it. We use it a lot and homemade pasta is so much tastier! You can use another brand or try it by hand if you wish!!
I really liked the color of the pasta too! We served it with a fresh vegetable sauce. It was DELISH! Plus, it made a ton so we rolled the extra pasta into little "nests" and put them in the freezer. I can't wait to eat this pasta again. Even Popeye would love this one!
Spinach Pasta
1 10 oz. package of frozen chopped spinach, thawed
1 T water
4 large eggs
4 cups sifted all purpose flour
Place spinach in a towel and wring out all of the water until spinach is dry. Finely chop the spinach using a food processor or blender.
Place the spinach, water, eggs, and flour in the mixer bowl. Attach the flat beater, turn to speed 2 and mix for 30 seconds.
Exchange the flat beater for the dough hook. Turn to speed 2 and knead for two minutes. Remove dough from bowl and hand knead for 1-2 minutes. Divide dough into eight pieces before processing with the pasta sheet roller attachment. If you don't have the KitchenAid Pasta Attachment, use your own manufactures instructions or try it by hand!
To cook the pasta, bring a larte pot of salted water to boil. Add in pasta. Cook for about 6-7 minutes. To freeze pasta, roll the fresh noodles into "nests" and freeze.

Your pasta looks great! Go out and buy the pasta attachment - I like that idea!
I'm so jealous of your awesome looking pasta! LOVE LOVE spinach pasta! I prefer it over the plain. Hope you're enjoying your day off!
Maria, this looks delish! Thanks for the reminder about using frozen spinach in the dough - it really makes the pasta simple to do.
Yum! My kind of pasta!
Gorgeous! Great looking meal!
Gorgeous pasta. I am seriously tempted by those pasta attachments for the KitchenAid. I have an imperia roller/cutter, but if my dough is being temperamental, it doesn't work well. I've made some great pastas with it and I've had at least one miserable pasta failure with it.
Awesome. I am bookm arking this as I have been wanting to make pasta. I wonder if it would work with white whole wheat flour.
Great job! your pasta look perfect! What a tasty looking dish! By the way, tonight we're having friends over and I'm making fresh tagliatelle and chicken parmesan...
Cheers,
Rosa
what a treat! I have been dying to make homemade linguini recently. and spinch flavored, too. what fun!
You make it sound so easy! I am tempted to look into this KA pasta attachment. Fresh pasta is such a treat!
I love spinach pasta! And done in 30 minutes? That's great!
I am glad you have a pasta roller because if you had to do this by hand everytime, well, it takes longer!
It looks so good though.
holy cow i love it!! i have yet to try homemade pasta :) this might have to be my first kind!
I can't wait till I get my mixer! I love creating pasta. Maria this does look really good.
Wow, this looks impressive! And so beautiful with the sauce over it!
I love fresh Spinach pasta! This looks fantastic!! You made it look so easy!!
I have never made my own pasta before. I really have to!! Love the colour of this one.
Maria, it's gorgeous and I would serve it with a spicy tomato sauce & garlic bread.
Beautiful! I love homemade spinach pasta. I have that attachment too, it is great.
I have been known to use baby food - pure pureed carrots, beets, etc. in with the flour, eggs and salt to make flavoured dough too.
I am really craving that pasta now...
I have never made my own pasta but you make it sound like so much fun.
Your lucky to have a husband who shares your love of cooking!
It's been way yo long since i have had fresh pasta and yours looks perfect. Love the vibrant color--wow!
I had spinach gnocchi once and loved it, so I bet I would love this!
You guys are amazing! The pasta looks amazing. Hmmm...maybe I should think about that pasta attachment after all. ;o)
I finally found myself a pasta maker I like (ie. I can afford) so BOOKMARKED! Thank you :)
Nothing compares to homemade pasta, this looks great!
You're amazing. I can barely open a package of pasta without watching it explode all over the floor, in the sink, under the stove and under the fridge. Then I spend the next five days trying to get my Chihuahuas to quit pawing under the hot oven.
beautiful pasta!
Superb! your pasta look really delicious.
Cheers,
Elra
Your pasta looks perfect - I am sad to say that my pasta roller has been sitting unused for quite some time now. I just need to make the time to make pasta!
i continue to be impressed by your pasta-making skills, and then finished dish looks absolutely delicious. hooray for green food. :)
I love homemade pasta and the spinach makes it so much better.
Fresh pasta is such a dream, isn't it? Well done! :)
I think pasta making is totally fun, but I've never made spinach pasta before. I love that color!
I don't have the pasta attachment....but my sister does!! I'll be calling her tomorrow!! LOL!!
i really need to use my KA pasta maker more often... thing is, i didn't notice a HUGE difference b/w store bought and homemade - is that bad? :)
I really need to make my own pasta. I love the colors of this dish. Delicious.
Lovely homemade dish!!
WOW - homemade pasta, that is SO impressive!!! Looks delicious too!
Yum! This looks awesome! I am going to buy the pasta attachments for my KitchenAid here in the next few months. Can't wait to start making my own pasta!
oh, wow. it's definitely too long since I've visited. I don't know whether I'd want to make the cocoa fudge cookies, or the spinach pasta, or the baguettes first! I have the KA attachment but didn't have good luck with my first try, and I definitely want to try again. I love spinach pasta, too. And I've been hearing so many good reviews of Peter Reinhart's book - those baguettes look perfect and mmm...you need good bread with pasta. Thanks for the inspiration!

Spinach pasta is my favourite, i'll give this a go and i'll hunt out my pasta make that's been in it's box, untouched, for 5 years.
